Easy Kid Friendly Recipes!

Listen friends, I officially have a 3 year old and wow kids food habits change so much after this age. Lincoln has gone from a (will eat anything and everything) to a very picky eater and it has been an adjustment for sure in our home. Finding healthy options for him to snack on has been a fun challenge and I wanted to share 2 recipes that are a household favorite for little ones and myself!

I have played around with a few recipes that I can prep at the beginning of the week and have easily accessible for him when he wants a "treat" without reaching for the ones in the pantry loaded with sugar. I have shared the recipes below, please let me know if your kiddos enjoyed them!

No Bake Chocolate Chip Granola Bars!

Ingredients:

1 Cup Almond Butter

2 1/2 Cups Rolled Oats

1/4 Cup Seeds (chia, flax, hemp hearts)

1/2 Cup Pure Maple Syrup

1 Tsp Vanilla

1 Tsp Cinnamon

1/2 Cup Raisins

1/2 Cup Chocolate Chips

Directions:

  1. In a large bowl add all ingredients and combine with rubber spatula! Play around with ingredients until texture desired (if too sticky add more oats, If too dry add more maple syrup or almond butter)

  2. In a square pan with parchment paper, add your mixture and flatten with spatula until evenly spread.

  3. Place in freezer for 20-30 min.

  4. Cut into bite size bars and serve!

**I keep the extras stored in a glass air tight container in fridge for up to 1 week! Freeze them if you want to double batch!

You can also do this as energy bites and form into small balls but I find this saves me time making it the granola bar way!

Healthy Cookie Dough Balls!

Ingredients:

1/2 Cup Almond Butter

1 Tsp Vanilla

3 Tablespoons Maple Syrup

1 Cup Almond Flour

1 Cup Chocolate Chips

Directions:

  1. Mix all ingredients into large bowl and fold in with rubber spatula.

  2. With cookie scoop form into balls and place in fridge or freezer in air tight container.
