Egg Roll Lettuce Wraps

Hi Friends! Asian Cuisine is by far one of my favorite types of food to indulge in, but unfortunately a lot of it can leave you feeling extra full and sluggish after eating. But its so delicious we indulge anyway right?

I was craving egg rolls the other day and my first thought was to make my "egg roll in a bowl" recipe, but it was not satisfying my cravings, I wanted that outer shell feel that you get when you bite into a crispy egg roll.

These were a perfect low carb option that gave me the crunch I was looking for in every bite. Try it out and let me know what you think!!


-1 lb Lean Ground Turkey

-¼ cup Low sodium Soya Sauce

-½ Head of Red cabbage

-½ Red onion

-1 Tablespoon Rice Vinegar

-1 Tablespoon Sesame Oil

-1 Cup Shredded Carrots

-¼ Cup Frozen Corn

-2 Tsp Garlic

-1 Tsp Ground Ginger

-Salt and pepper to taste

-1 Head of Romaine lettuce


1. In a large pan on medium to high heat: Cook ground turkey thoroughly. While the meat is browning chop the onion, cabbage into thin slices and shred carrots.

2. When Meat is thoroughly cooked, add onion, corn, sesame oil, rice vinegar, soya sauce, ginger and garlic. Simmer for 3-5 min.

3. Add your cabbage, and carrots. I only cook for an extra 2-3 min on medium heat because I prefer them a bit crunchy.

Enjoy! Serve on Romaine lettuce hearts for a yummy crunch.
