Low Carb Chicken Lettuce Wraps.

A good Chicken salad is always my go-to when it comes to road trips, days on the lake, or just a quick lunch when you have leftover chicken in the fridge to eat. We made a huge whole chicken in the slow-cooker this week and had enough leftovers to last us the entire week.

We are currently doing low-carb (but delicious) meals in our household, after the holidays and a little too much indulging we were definitely feeling sluggish, a little heavier (which is fine) but most of all low energy and that is always my bodies way of telling me its time to detox.

Try out this amazing Chicken salad and use it for sandwiches, wraps, salads, or even dip veggies in it for a change up!

Chicken Salad:

-2 Cups Shredded Chicken -1 Cup Light Mayo or Plain Greek Yogurt -1-2 Tablespoons Dijon Mustard

-1 Tablespoon Franks Hott Sauce -1/4 Cup chopped Chives or Celery -1 Tsp Paprika -Salt + Pepper to taste -6-8 Butter Lettuce Cups


1. In a large bowl add all ingredients, mix well and chill for 30 min. Serve on Lettuce cups for a low carb option.
