Strawberry Brownie Cheesecake Bars!

Its official guys...Quarantine life has officially turned me into a baking lover, and I am okay with it. We were craving our Sweet Potato Brownies so I started making a batch and thought... How can I make this next level delicious? The answer is always CHEESECAKE. Try out these Strawberry Cheesecake Brownies for your next baking day or dessert for the family.

Honestly I have never been huge on baking. I think its the following a recipe and having to have the specific ingredients or the recipe doesn't work out that makes me rebellious....but when i can make something that i usually have the ingredients in my pantry already for..I am in! First you will prepare your brownies: Sweet Potato Brownies: Ingredients: -3/4 Cup Mashed Sweet Potato -1 Cup Almond Butter -1/4 Cup Almond Flour -1/4 Cup Cocoa Powder -2/3 Cup Cane sugar

-1 ½ Tsp Baking Soda -1/4 Tsp Himalayan Pink Salt -1 Tsp Vanilla Directions: 1. In medium sized bowl mix mashed sweet potato, vanilla and melted almond butter. 2. In separate bowl mix remaining ingredients, add over we mixture and place onto 9x9 pan. 3. Use a spatula to flatten mixture out evenly and bake for 20 min at 350 degrees. While your brownies are cooking; prepare your cheesecake mixture.

Cheesecake: -1 Package Cream Cheese Softened

-1/4 Cup Cane Sugar -1 Egg -1/2 Tsp Vanilla -2 Tablespoons of Jam (set aside) In a medium bowl, add cream cheese, egg, vanilla, and cane sugar and blend until no lumps with a hand mixer. When brownies are cooked and cooled down, add your cream cheese frosting and spread evenly with spatula. Add your strawberry jam and with a butter knife gently swirl into the cream cheese. Refrigerate for 20-30 min and serve!
