Summer Pasta Salad

Its officially barbecue season in Manitoba which means the pressure is on to figure out what dish to bring that will be a huge crowd pleaser (not to mention who doesn't secretly love having the best dish at a party?)

My usual go-to is a summer salad or a trusty dip that is quick and simple. Easy at home ingredients that are not complicated and you do not have to run to the grocery store frantically searching for that one thing your recipe calls for.

We had a little get together with Matts cousin and his wife who is expecting last weekend and she told me she LOVES pasta salad. So you know what I brought her? Pasta salad of course. :)

Now lets get into what you all came here for- the Recipe!


(Combine all ingredients in a large bowl)

-Spiral Gluten Free Pasta

-1/2 bag Pre Shredded Carrots

-1 Large Cucumber diced

-1/2 Cup Crumbled Feta Cheese

-2 Cups Spinach

-1/2 Chopped Red Onion

-1 Cup Grape Tomatoes

-1/2 Cup Low Fat Shredded Cheese

-Grimm's Fine foods Kolbassa Sausage Bites

Dressing: (In separate bowl mix together:)

-1/2 Juiced Lemon

-1 Tablespoon fresh Dill

-1/2 Cup Extra Virgin Olive Oil

-1-2 Tablespoons light Mayo (optional)

-1 Tablespoon Paprika

-Salt + Pepper To Taste

Pour dressing over salad mixture, mix well and refrigerate for at least an hour before serving!
